"I love the smoothness of rum as the alcoholic base, but I have tried it with Calvados, and aquavit and pear brandy, Kirschwasser (a Cherry based spirit), bourbon, cognac and many others. Each tastes uniquely different".
20 egg yolks
2 pounds confectioner's sugar
4 cups heavy cream
4 cups light rum
1 tablespoon pure vanilla extract
juice of 1 lemon.
Whisk it all together (I like using my blender, but then need to do it in batches). Strain the mix into pretty bottles and cork them. That's all there is to it. It can be used immediately - so its perfect for a last minute gift.
You can seal the cork with some sealing wax, add a pretty ribbon and there you have it, a fantastic present for your friends, or for yourself? Please, keep it on ice or refrigerate .....
