Gingered beets ........ another 'Healing' recipe Beets are hands down one of the most healthful foods you can treat your body to ... and they also happen to be one of the very few things whose taste I absolutely, totally HATE. So you can imagine how thrilled I was when our healing angel Rebecca told me that beets were one of the best foods for Randy to get back on his feet again.

The last time I put my hands on beets was some 20 years ago ... again only out of love, the only true motivator- I made beet juice for my then little toddler Derek. Beautiful color and very healthy, but it fought back! After juicing some beets and giving Derek this saintly drink (I felt so angelic, having overcome my major dislike and vow never to do anything 'beety' in my kitchen), I had to take Derek out for an appointment. We took a taxi. It was cold; I wore champagne colored, suede suit with a pale pink angora sweater and a big red fake fur coat. He was dressed in his most adorable fuzzy white snow suit. Almost at our destination ... you know what's coming, don't you? ... yes, he did - he threw up all over me; crimson gallons of that blasted beet juice. All I could do was tell the driver to please take us back to our point of origin. Still in the taxi, I undressed my Derek completely ... he was soaked and bright red all over- and wrapped him in my big coat.

Back home my lovely suede suit was done for, I had to throw it out. The sweater bit the dust as well. The fur coat ... well it was red ... so it's still in my closet for really cold days. And no, I did never make beet juice for Derek or for Tate ever again. I got the message!

That was the revenge of the beets. I did not touch them again until just now. Once again out of love. No, Randy did not up chuck them too. He loved them and you know what? I actually kind of liked them too ... I cannot cook something without tasting. It is impossible. So, with great, great reluctance did I put some of the red stuff in my mouth? Not so bad. But I won't make a habit of it. I think it was the ginger that made it halfway palatable for me.

In addition to the health booster of the red beets, ginger is a strong immune booster, so is garlic, as well as apple cider vinegar. So, all in all, this dish is a real kick in the butt (in a good way) for your immune system.
